About me

I'm Pauly and this is my second foray into the world of food blogging. I previously had a blog called "easychefireland" which  but some stroke of bad luck I got locked out of a little while ago so I would start again. I'm a psychiatric nurse living in Cork for the last 20 years. I have adored cooking and baking and importantly eating good food since I was very young. Living in Cork has only intensified this over the last 20 years. I am biased at this stage but I think the Cork has some of the best restaurants in the country. What I'm hoping to do here is share my recipes, food and wine recommendations.I have no formal training however I have been cooking for about 25 years now. My first time so to speak was when my sister taught me to make pasta & lasagne. Thanks sis.

Quick and Easy Chocolate Chip Cookies

Here are some really easy and tasty chocolate chip cookies/biscuits (I never really know the difference between the two anyway. Working in a mental health unit there comes a time when my team hits that 4pm slump and needs a pick me up. I like to when possible bake something to get us through the afternoon. I did my own little twist on Lilly Higgins’s Coconut cookies. I really enjoyed hers but I also love the flavour that almonds give to biscuits. This mixture makes 30+ cookies so don’t crowd them when you put them in the tray . I did on my first try and I ended up with one huge cookie.

For this recipe you will need:

  • 150g Caster Sugar
  • 150g self raising flour
  • 80g Desiccated coconut
  • 80g Ground Almonds
  • 100g Chocolate chips
  • 2 large eggs (beaten)
  • 110g butter melted

Method:

  1. Mix all the dry ingredients in a bowl
  2. You can either melt the butter in a pan on a very slow heat or do what I do and pop it in the microwave for 30 seconds at a time until melted.
  3. Create a well in the middle of the dry mixture and add the melted butter
  4. Now add the beaten eggs, mix well.
  5. Using  a teaspoon evenly space the cookie dough on a baking tray.
  6. I like to use baking paper as it is easy to clean and also the cookies come away from the tray without baking,
  7. Place in the over at 180 degrees for 12-14 minutes or until lightly golden.
